Bon Appetite! In 2010 my husband (then fiance) tracked our diet progress through our blog on the "Paleo Diet". The diet really transformed our way of living and with much dedication, enabled us to maintain a higher quality of life. Through the Paleo diet I found many creative ways to prepare, store, and consume foods. Food eventually became a fuel rather than an indulgence. However, after a full year it became old and not so exciting and the inventive side of me became tiresome. I started to seek other alternatives to EATING CLEAN. I came across the "Eat Clean" diet and tried it out for a couple of months. I loved that I could eat whole grain and dairy products again (without feeling guilty). The Eat Clean Diet is similar to the Paleo Diet. However there are addidtions to the "Allowed" foods list. Whole Grain Products (Natural state) such as steel cut oats and sprouted bread is permited along with certain dairy products. We found that this diet was a bit more practical and it fits well with our active lifestyle. I hope you enjoy the blog and our posts. Your feedback is appreciated! Val VS Diet

Eating to Live or Living to Eat?
I am not a dietitian, nor a food scientist, or even an expert on nutrition. I am just one of many who loves food and has found a way for food to work for my body not only as fuel but also keeping it an indulgence. Americans LOVE food. Food is the center of our culture. We live for a tastey meal and some of us die from it.

I was never taught to eat healthy. I was taught to eat out of survival. My parents would grocery shop on a slim budget and what was served better had been eaten because there was no such thing as a "free lunch". My dad loved to say that...

So fast forward to 2009... I knew things had to change. I was unhappy with my physical appearance and the way I physically felt overall. I opened a few books and journals about healthy lifestyles did my research and joined my local CrossFit Affiliate. Here I am in 2012, feeling pretty awesome! In addition to Crossfitting for the past 2 years, I have recently discovered distance running. My goal is to run a half marathon by the summer. 

In the past 2 years I have found a way to be one with my fuel. I don't have to hate what I eat, I eat to live and I live to eat!
